Different types of food always intrigue me, especially varieties with differences, like color. Does it really taste that different? Here are two types of garlic, one the typical 'white' garlic and one black. Black garlic is actually fermented white garlic. Who knows how it happens, but I was pleasantly surprised by the taste and almost sweet smell. We tried it in some stir fry and it was very mild. I would venture to try the black garlic with some plain pasta and olive oil.
