Part two of the canned soup recipe series!
I am not gonna lie, this was my favorite thing to eat growing up. I was not a child that liked veggies, or eating my entire dinner, but I like this recipe. As an adult, I imagine myself swimming in a sea of Chicken Casserole.
I don’t even have a written recipe for this dish, it is out of memory. My mom gave it to me in college and Will and I have been making it ever since. It has the trusty can of cream of chicken soup that makes veggies taste SO good. So, if you want your kids to clean their plate, or your lover to love you more, make this dish tonight.
2 Boneless Chicken Breasts
1 can of Cream of Chicken Soup
1 cup of Mayo
1 bag Frozen Broccoli or Cauliflower
1 cup shredded Cheddar Cheese
Croutons
Poach (boil) chicken breasts and cut into bit sized pieces. In a baking dish layer broccoli and chicken. Mix the can of soup and cup of mayo together and spread on top of broccoli and chicken. Sprinkle with cheddar cheese (more or less to taste) and croutons. Bake in a 350 degree oven for 20 minutes.
