The Catskill Mountains for Labor Day weekend, could you ask for anything better? How about neighbors who raise their own pigs and love to share the bacon. Now that’s what I call a vacation!
We received a welcome invitation to come and stay at our friends house for the long weekend. Imagine, seven good friends, Nero (our boxer dog) off the leash, bonfires, a party at the neighbors and a gift of fresh smoked bacon. We had an unbelievable time as you could imagine! Honestly when do you get to go to a party and come home with fresh smoked bacon for the morning? This bacon wasn’t just taken off the shelf at the grocery store, these people care for their pigs. To know where something comes from is one thing, but when you have people tell you, “It was hard to let the pigs go”, you know this food was well cared for every step of the way.
So as the bacon sizzled in the pan and our mouths started watering, our hats were off to the pigs and their loving farmer family.
