Trying to wait out these last few days of rainy weather has got me really anticipating the summer. All the fresh produce, seafood and summer desserts!

When I was a kid, my dad had blueberry bushes in front of the house. We would pick them and put them on anything, especially pancakes. So it’s no wonder that I like blueberries in any dessert.

Here is a little dessert we whipped up with some fresh blueberries, italian cookies, Cointreau and whipped cream.

Blueberry Delight Recipe

Ingredients

• 1 box of store bought Italian cookies such as lady fingers
• 1 pint blueberries
• Cointreau, 2 jiggers divided among 4 servings
• Homemade whipped cream

Directions

1. Layer the cookies and blueberries and pour Cointreau over the top.
2. Top with a nice spoonful of whipped cream and find a nice place in the sun to enjoy! Makes 4 servings.
